Alfredo sauce


This sauce is so freaking delicious that your family and friends will demand it from you! The reason it is so delish is because it has almost as much cheese as cream..a win win! Here at Cugini we use a 3 cheese blend but we want to keep it easy on your pocket book and excellent at the same time.

2 -2 1/2 Cups Heavy Whipping Cream (40% works best)

2 cups grated Parmesan cheese…the good stuff! If it is domestic or comes from a can…don’t complain about the below average outcome of your sauce!

Heaping TBSP of crushed garlic

olive oil (you can use butter if you prefer or 1/2 oil and 1/2 butter

Nutmeg (grated)

S/P to taste

 

Cover the bottom of a small sauce pan with oil. Add garlic. When garlic starts to sizzle (don’t burn it!) add cream. Whisk until soft boil. Add cheese. Stir to soft boil and remove from heat. Add salt and pepper to tast. Grate in nutmeg using a micro planer (fresh nutmeg nuts are THE BEST way to get a mild, delicious flavor).
If it is too thick add a bit more oil or splash of pasta water before serving.

Excellent with pastas such as:

Fettucine, Spaghetti, Pappardelle, Penne and more. Baking it gives it a richer flavor!!
