Our Greece to Italy Tour in 2019 was a fantastic time for all! 26 of us met up in Athens, Greece and away we went. After our welcome dinner we toured the sights of the ruins such as the Acropolis and the Temple of Zeus. We took a ferry to the Island of Mykonos to see how the rich and famous live. Then off to Santorini which was the most beautiful place I have ever been. We toured from one side to the other and everything in between, including the Akrotiri, inThera, the archeological site of the sunken Greece from 13 century B.C.!! So many phenomenal and historical things to see back into ancient Greece.

Then we hopped a flight to Roma! Toured all over for a few days visiting the Vatican, ancient ruins, Colosseum, Jewish Ghetto, Trevi Fountain, pantheon and more! We covered so much territory because there is so much to do and see!

All on a bus as we headed down to the beautiful, amazing and historical Matera! Third oldest city in the history of the inhabited world…only after Jericho and Aleppo! In the remote southern region of Basilicata (also called Lucania), still little-visited by foreign travelers, it is a town famous for its extensive cave-dwelling district, The Sassi. We stayed in the heart of the city touring caves and venturing out each day for a new experience in this Unesco European Capital of Culture 2019!

Matera: The Most Spectacular City in Italy

Off even more to the South we headed to Bari with a stop along the way in Alberobello. We spent an afternoon of strolling through the streets, checking out the houses and enjoying some of the beauty, wine and shopping. Off to Bari where we have a parting drink together and explore the city on our own before we pack up and head back to our final destination…HOME.

A trip of a life time…many friends gained!!

A time when wine makers “tap into the barrel” in anticipation of future releases as well as sampling and sales of their other available wines. This sauce is so freaking delicious that your family and friends will demand it from you! The reason it is so delish is because it has almost as much cheese as cream..a win win! Here at Cugini we use a 3 cheese blend but we want to keep it easy on your pocket book and excellent at the same time.

2 -2 1/2 Cups Heavy Whipping Cream (40% works best)

2 cups grated Parmesan cheese…the good stuff! If it is domestic or comes from a can…don’t complain about the below average outcome of your sauce!

Heaping TBSP of crushed garlic

olive oil (you can use butter if you prefer or 1/2 oil and 1/2 butter

Nutmeg (grated)

S/P to taste

 

Cover the bottom of a small sauce pan with oil. Add garlic. When garlic starts to sizzle (don’t burn it!) add cream. Whisk until soft boil. Add cheese. Stir to soft boil and remove from heat. Add salt and pepper to tast. Grate in nutmeg using a micro planer (fresh nutmeg nuts are THE BEST way to get a mild, delicious flavor).
If it is too thick add a bit more oil or splash of pasta water before serving.

Excellent with pastas such as:

Fettucine, Spaghetti, Pappardelle, Penne and more. Baking it gives it a richer flavor!!

3 or 4 garlic cloves

1/2-3/4 cup grated Parmesan(you can use Pecorino Romano if you prefer but then will omit the salt)

1/2 cup pine nuts

6-8 cups fresh basil

mild olive oil

salt to taste

 

Pulse first 4 ing. in a food processor.. Add clean, dry basil to the food processor and pulse with other ingredients. Add olive until smooth and to the desired consistency. You want it to run a bit when you put it on a plate. Salt to taste!

You can easily cut this recipe in half. Freezes well if you want to take advantage of the fresh, summer basil!!

-add to cold pasta salad- (mix in balsamic vinegar for a taste explosion) farfalle, rotini, fusilli, gemeli, campanelle, cavatapi

-add extra oil and mix with warm pasta instead of marinara- linguine, capellini,

-add it to mayo for a great sandwich spread

1 1/2 C Ricotta (dry or very well dripped)

1 C. grated parmigiano reggiano (the real thing!)

1 egg and 1 egg yolk

2 1/4 tsp salt

1/4 C flour

 

Pulse these ingredients in a food processor until silky smooth…about 1-2 min

Dust a cookie sheet with a bit of flour and use a small spoon to scoop up some dough from the processor. Scrape excess dough on the edge of the processor. You want a flat top to the dough on the spoon. Use you water-dampened index finger to roll the dough from the back to front of the spoon..forming a small dumpling onto the cookie sheet. Repeat until all the dough has been used. They should resemble gnocchi.

Place the dumpling into the pot of water for 3 to 4 min.

In a pan on the stove bring 2 C. chix stock, 2 TBSP butter, sliced or crushed garlic, a pich of salt and a squeeze of lemon juice to a simmer. (here you can sautee a vegetable, like asparagus or sliced summer squash, add dumplings from boiling water  and cook in pan for about 4 more min, until about twice the size.

Serve with LOTS of grated parmigiano reggiano. Use a bowl as the sauce will be thin.
